Rose & PB donuts
Im always looking for new ‘healthy’ ways to enjoy desert. As a vegan I’ve never wanted to miss out on the treats that others enjoy and I don’t think that you have to. To me there’s nothing better than cosying up with a cup of tea, a good book and a sweet treat. Baking helps me relax and inspires me to be creative. I love making things beautiful and spoiling those I love with a gift from my oven.
3/4 cup of flour (I used gluten free)
1/2 cup of coconut sugar
1/4 cup of cacao powder
1 1/2 tsp of baking powder
1/2 cup of coconut yogurt
1/4 cup of dairy free milk (I used oat)
1 flaxseed egg (1 tsp of ground flax seed and 3 tsp of water)
Combine all dry ingredients in a bowl with a whisk to remove any lumps.
Mix the wet ingredients in a jug and pour in slowly.
Stir together until smooth.
Pout into a donut pan (i didn’t have a donut pan so I moulded tin foil into a cone to place in the centre of a cup cake tin and this worked a treat)
Bake at 180 for 15-20 minutes
Once completely cooled dip into smooth peanut butter and sprinkle with rose petals.
Enjoy 1 or 10 with a large mug of tea and a romanic novel.
